G/F Food Review - Crackers

This week I get to share one of my favorite easy food items.  It is by Glutino.

There are several different flavors such as Original, Chedder, Multigrain, and Vegetable.  I have tried just about all of them and they are all delicious.

Okay, down to the nitty gritty.  The box contains two sealed bags like...

Within the bags are crackers like...

The crackers are strong enough to take toppings.  I suggests cheese and apples!  But seriously, the cracker has a very good texture and does not have that g/f cardboard taste.  They can be snapped or bit in half with the remaining half staying intact.  I often crush them up into slightly smaller pieces and place them in my soup.  They tend to soak up the broth quickly so I add the crackers in one at a time.  That way I can still get a little bit of crunch.

If you go to Glutino you can sign up for coupons and updates from the company.  They are very quick in sending out the coupons (and in an envelop written by a real person!).  Glutino has many other products, some of which I will review later on, and some I have yet to try.

I highly suggest checking these out.  They are my favorite g/f cracker!

What I've been reading

So I am a bad blogger.  I didn't post yesterday.  I might have to redo my schedule to pick a different topic for Mondays or I just have to make sure I set up my posts during the weekend.

I apologize.  I will try to organize myself better.

For today I have a quick little review of a graphic novel series I have been reading.  The series I am reading is Fables.  It is a series is about all of our favorite fairy tale and fable characters.  There are fables characters living in New York City having escaped from their Homelands to get away from the unidentified Adversary.  Such good stuff!!  I just started this one today.  It is the 10th book of the Fables Series and delving deeper into the conflicts between the Fables and the Homeland.

I have to thank my bf for buying me the first one and getting me hooked.

There is a new series that focuses on the girls of the fairy tale and fable world!!!  Fairest follows the girls around and focuses on their own stories.  The first book in the series focuses on Briar Rose.  I have not yet read it because I haven't gotten to Fables #107... I am at #60 and can't decide if I should wait to read it until I get to #107 or if I don't want to be patient and read it now and possibly clue myself into something that I shouldn't "know" yet.  Gaaahhh!!!

So to sum up:  I was a sucky blogger yesterday but I have a new plan in place and you should read Fables.

Oh and I love when I get comments on the posts I make!  It makes me believe that there really are people out there reading my blog!!

St. Pat's Day

Happy St. Patrick's Day!  I spent the day downtown watching my bf and our friend drink.  I am not much of a beer drinker.  But to all of those who do

CHEERS!!!

Oh and make sure you have a safe way to get home.

Food Friday - Pizza Pasta Bake

I enjoy cooking but the problem normally is that we end up with a great deal of left overs.  The bf doesn't bring lunch to work (which would help this problem and save money) so I am stuck with making sure it gets eaten.  I have begun adjusting some of my moms 5-6 person recipes to better accommodate 2-3 people. That way I don't have to eat the same two meals for three or four days.

One recent recipe that got the slim-down makeover is a Pizza Casserole recipe we got from one of my Aunts.

Yup another hand written one, but at least this one is more organized.  And no, I was not the one to write this down.

So how it was updated.  We did not use as much meat, noodles, or sauce.  The size pan we used was also smaller.

What did we use?

Tinkyada Penne Pasta.  I. Love. This. Pasta.

The meat mixture from this posts Publix recipe.  We had made over 3 pounds that day and froze over half of it.

We tend to buy pasta sauce in bulk when we have coupons so we had this in the pantry.  Any flavor would do.

I love olives so they always have to be present on pizza anything.

This seasoning was already in the meat mixture so we did not end up using it.

Pizza things always must have cheese!  The mozzarella was low so we used both.

On to making it!

First we cooked the pasta.  Then placed the thawed meat mixture in with the drained pasta.

Then we dumped about 2/3rds of the pasta sauce on top of that.

It got stirred and stirred until it was fully mixed and transferred into the pan.

Because of my love of olives my side was covered with them.  Really it can be covered with any toppings desired.  I even added more sauce to my side.  I think I could eat marinara sauce plain.

Next came the cheeeeese!

Bake it in the oven for the time specified. 350 for 20 minutes.

Tada!!!
You can totally tell which is my side.
This could always be made in smaller pans so that each person has their own personal pizza pasta bake.  I think we will have to do that next time.

St. Patrick's Day is tomorrow!  I am racking my brain to think of an outfit with green in it!!

More about Me

I hate to say that I am being lazy today but I am.  I have an idea for a tutorial post but I just don't have the energy or brain power to organize it all up here for you.

So instead I am going to share some things about me!

First, the bf and I went to two concerts last week and they were FUN. and Jukebox the Ghost.  Never heard of them?  You should check them out.  Very good stuff.  My sister Staci LOVES Jukebox the Ghost and she couldn't make it to the concert.  They are all super cool guys but the lead singer, Ben, was taking photos with some other fans and I asked if I could get one with him to show (off) to Staci.

Second, the bf has a so super cute kitten (well she isn't really a kitten anymore but we call her that) named Kairi.  It is pronounced K-i-r-e.  Totally not phonetically spelt but I didn't name her.  She was a stray that he rescued and she just never left.

I know you just died from cuteness.  :)

Third, I am almost finished getting laser hair removal on my legs.  I LOVE it.  I have not shaved since I started (I know a little TMI but it is true).  However, this last time they must not have changed the spray stuff soon enough because my legs looked like this the next morning...
My knee has the pox!!
Supposedly this is normal but a first for me.  It has calmed down to the point where it just looks like a really weird sunburn.

And lastly, I love when my hair is curly.  I have naturally very straight hair and it does not hold a curl hardly at all.  My sister (Staci again) got a Chi Curly thing for Christmas and used it on my hair and voila!:

CURLY HAIR!!!  It even stayed fairly curly for the day after too!!  I have yet to try to do this on my own... but I am sure it won't look half as good as she did it.

That is all for me.  I am heading to my friends house for some Project Runway goodness and then Trivia!

I will have a real post tomorrow.  And it is delicious!

Gluten-free Food Review - Julian's Recipe Pancakes!

This week I am reviewing another fabulous gluten-free item.  I LOVE them and no it is not by Udi's. :)  It is Belgian Chocolate Pancakes by Julian's Recipe!  I have to say sooooooooo good.  Light, fluffy and great tasting.  The only bad part is when they are gone.
And they have plain and wild blueberry too!

A little history

I have found them in Whole Foods but if you request an item at Publix they will special order it.  And I am telling you they are totally worth the special order.

Here is what they look like out of the box.
You get 4 pancakes in a package and two packages in a box.
I always cook my pancakes from frozen.

You can add on extra toppings and stuff like peanut butter!
You should check them out, they are totally worth it.
