Food Friday - Chick Pea Salad

This Food Friday is special.  I am sharing a recipe that I learned from my cousin while I was on my mini trip in May.

The Chick Pea Salad is so ridiculous easy and so very delicious.

The ingedients are a can of chick peas, grape tomatoes, green beans, and quinoa.  You will need the Balsamic Vinegar and Olive Oil.

You must wash the beans and tomatoes.  Strain and rinse the chick peas.

Steam those green beans (about 2-3 minutes because you want them to still be a little crispy).  I made the mistake of steaming the first batch for too long.  I got the second batch just right.

Once the beans are steamed, cut them in 1/2 or to whatever size is prefered.

Cut the tomatoes in 1/2.

Place the chick peas, green beans, and tomatoes into a bowl.

Mix in just a little bit of the balsamic and olive oil.  Then you are ready to go!

If you want to get more out of it, cook and add in the quinoa to make it more filling.  I just added the quiona onto my plate for dinner.

Gluten-free Food Review - Roasted Chick Peas











While I was home two weekends ago my mom was on a major cooking session since Staci was home.  You see she is the sister that has the crazier allergies than me.  So one of the things that my mom made for Staci was 8 cans worth of roasted chick peas.  They are very easy and, if they are cooked just right, very good.  It is a crunchy snack and Staci even thought that you might be able to use them as "croutons" on a salad.

To the nitty gritty!

Ingredients:


Chick peas
Olive Oil and spices
First you open, drain, and rinse the chick peas.
Next you lay them all out on a paper towels to allow them to dry.


Once they are all dry you have to place them as evenly as possible on a baking sheet.

Heat the oven to 400 degrees.  Cook the chick peas for about 20 minutes.  Be sure to check on them as some of them tend to burn.

Take out the baking sheet and lower the temperature to 300.  Shake them around to loosen any up that have stuck to the sheet (my mom is using a spatula in the picture above). Place them back in the oven.  Every 15-20 minutes shake (or use the spatula) the peas around so they won't stick.  The total length the peas should be in the oven at 300 degree is about one hour.


Once they come out of the oven allow them to cool completely.  The best part is that you can season them with whatever you want!  Add some Olive Oil and seasoning to the chick peas.  Mix until all is coated.
